17 Syllables of Fridaiku: Tomato Infatuation

It’s Friday again and you know what that means....Friday Haikus; or as some have become comfortable, Fridakus! The cohort and I continue in the tomato fest at least just one more time. We’ve had fun with it. Every morning, I water our huge tomato plant standing 6 feet just off the steps of my back deck. I try to only water it at the base leaving the leaves as dry as possible. The leaves are trimmed often so the sun can get to each tomato and hopefully cut down on the possibility of tomato worms. So far, so good. I actually hated tomatoes since I was a kid. Something about eating them always caused a gag reflex until as of late. Sure, I could stomach them on a sandwich or sparaticly in a salad. I had grown up watching them being eaten like apples, just adding salt and biting with running red juices chasing gravity everywhere. With age, I have become wiser. The benefits outweigh my grammar-school dislike. But enough about all that...Les Fridaku de la Tomato Eroutique!

Fridaku Birthday Weekend and Antics

It’s Friday again and it has been a very busy but fast week. Sometimes you have those weeks you wouldn’t mind doing again but only if you had to pick one—this was one of those. Friday we have implemented a new tradition — Fitness Friday! Yep. We will start out slow with 10 pushups for a month and then progress from there. So far all the guys jumped in and it felt great. I am planning on having a killer workout this afternoon as soon as I can get out of here.

Of course, the weekend will go quickly. Luckily its also Birthday Weekend for my nephew Christopher and my brother-in-law Mark. Birthdays are fun; especially since they are not funerals. It adds a sunny outlook to a weekend rumored to be nasty weather wise. At least with birthdays we are reminded of our strength and that sometimes we do win; otherwise we wouldnt be here. If you feel like you have a lousy life or that things are always bad; it serves as another small amount of evidence that perhaps you should be looking for somebody to help. There’s always somebody doing worse than you are. Sometimes you see people with incredible spirits who really could easily pick a reason to not be happy. On those days, you know you dont have any legitimate excuses. All your parts are there and functioning...surely they could be put to better use than complaining. This week I have talked to several people who have been evaluating their lives. I think that’s healthy to take assessments often. In doing so, it always means change—which we rarely are willing to make; especially drastic change immediately. One of my favorite podcasts Dan Miller is loaded with common sense solutions that we have to constantly be reminded of by some stranger.

Friday! Oh, that means its time for Fridaku too! I met the Pensive One at our favorite coffehouse for a chat with the chattables. Since he’s from Louisiana, he reminded me that its Mardi Grais weekend. I suppose I will be rooting for the Saints only because that region has had a long rough time and could use as much sunshine as possible. Meanwhile, I still like Payton; so its ok either way for me.

Friday Fixins Are No Shrimp

I just love good shrimp scampi. I went to a new Red Lobster at the Providence exit and of course had high expectations. Since it just opened, I knew it would be good. Dont you just love those cheddar bisquits too! They were excellent! They only made me think everything else would be outstanding. Unfortunately, beyond the bisquits, I should have gone to Captain D's. Everything was just not that good. For what I spent, I could have gotten so much more AND enjoyed myself too with some change for a movie left over. The building was quite nice; unfortunately it wasnt being offered on the menu. Nonetheless, today's Friday Fixin is about something little with a great big taste! How could you go wrong in the comfort of your own home. Cant you imagine the air filled with that delectable aroma of garlic, lemon and shrimp! mmmmm mmmmmmm mmmm!

Shrimp Scampi

Ingredients:
2 pounds shrimp
8 tablespoons butter
4 large cloves garlic
4 tablespoons dry vermouth
2 tablespoons vegetable oil
4 tablespoons fresh parsley, or dried
2 teaspoons flour
Dash of lemon juice (1/2 of a lemon)
1 pound linguine (or your favorite pasta of choice)
Salt and pepper to taste

Directions:
1. Cook linguine according to package directions (al dente).
2. Rinse, peel, and de-vein the shrimp in cold water. Dry on paper towels.
3. Sauté garlic and parsley in butter and oil for 1 to 2 minutes.
4. DO NOT let the garlic turn brown.
5. Add the vermouth, then shrimp.
6. Raise heat to medium-high and cook for 3 to 5 minutes stirring frequently.
7. Do not overcook. Season with salt and pepper.
8. Add flour to slightly thicken the garlic butter.
9. Add the lemon juice during the last minute of cooking.
10. Remove from the heat. Serve immediately. Serves 4 to 6.



Since its been so long since you had a good Friday Fixins; lets go for TWO! As you know, I am not much on "healthy foods;" you might as well die happy; but this might be close. At least it is a very light "snack" with a big punch.

CHINESE CABBAGE SALAD  

INGREDIENTS:
1 head Chinese cabbage (napa), finely chopped
Diced green onions
2 pkgs. Top Ramen noodle soup (break up noodles, discard flavor packet)
1/2 c. sesame seeds (1.78 oz. can is okay)
1/2 c. butter
1 sm. pkg. sliced or slivered almonds
1 sm pkg of pecan pieces

DRESSING:
1/2 c. salad oil
2 tsp. soy sauce
1 c. sugar
1/2 c. vinegar

1. Chop onions and cabbage and mix together in a large bowl. Chill for two hours.
2. Brown noodles, sesame seeds and almonds in butter until a nice tan color.
3. Drain on paper towel. Keep at room temperature.

DRESSING: Mix dressing ingredients until sugar is dissolved and oil blends in. Twenty minutes before serving, mix all together. Makes about 13 servings.

BLUE Monday: Titan Blues!





Its another exciting time here in the Ville; Nashville that is, Tennessee!!! The air is really brisk today; very much unlike the sleevelessly warm day before. It was a great weekend all together! We hosted a "Supper Club" gathering Saturday night at 6:30 which always means you spend evey minute before then cleaning, decorating and cooking. This was no different. We even skipped gym. I wish I could say I had been heartbroken. We hung more pictures in one afternoon than we have in the last 10 years. I had stopped by Hobby Lobby Friday afternoon on the way home. It became terrifyingly obvious that this was one of the best Hobby Lobbies I had ever seen. I couldn't focus. Everything was screaming "buy me!" or "this would look great" and OVERLOAD. I had to leave. I called honey and told her we would have to come back together. It was a fantastic menu of sweet potato cassorole, green beans, mashed potatoes, home baked turkey, little wiennies, ice cream, homemade poundcake, pumpkin spice pudding, cresant roles, sweet tea and ice cold lemonade; all kicked of with a prayer of thanks and blessings.






Sunday was a really pleasant day. After sleeping in til noon, my sweetie and I planted 13 trees around the homestead and have another 20+ to go. The best part is I got to play with a new toy I rented from Home Depot. They really do have ways of making life easier. Typically I would have used a shovel and post hole digger; whew, I rented a hole driller and saved my palms, my shoulders and my energy. It was just like a weedeater with a drill on the end. Sweet! In four hours I had all the holes dug. I am sure my inexperience was visible; but I didnt care. I will not be beaten by the machine. I did get the hang of it and all went well.


The bad news: after putting out all those trees, it is allegedly "freezing" tonite. The game can easily be watched while snuggling on the couch eating tasty treats. The workout can easily be scooted to another day. The workday has been good. I have knocked out an 8 page newsletter, a 40 page magazine layout and started a newspaper.






Traffic was horrible this morning. The Colts are in town and a GET MOTIVATED siminar. I am certain that some folks enjoyed the seminar as a necessary business expense to be in town for the game a few hours later; not to discredit those motovational seminars — they are typically very good! The hard part is the jolt back to reality after you return home/work.

Fabulous Banana Friday Fixins!

Ah, the Music City is earning its name this week. Its CMA Festival time and the city is shuffling with visitors. Nashville is a great city; too small to be hick, to big to be ignored. I like going to lunch seeing a mix of peoples. A stew just isnt as good with just corn. Anyway, its Friday again but it seems like another long week. In spite of just returning from California (which is another town I love) I am fast and furious on my responsibilities that linger from my absence. Its all good. I only play to win; I only lose to learn.

This is a typical story. I left the office at lunch and was in my car before realizing that I needed to take a leak. So where can I go thats quick, convenient and has a clean bathroom. In my case, I went to Arbys. By now, they know me — way too many visits per week. So I park and take the stroll toward the front door. Clearly a busy spot, the warm sun gleaming on my smooth soft brown with a smiley face on my chest and a baseball cap on my dome; all laced with a smile. I yack with the manager about what I wanted and swaggered to the louve. "WHAT!!!???" I walked in and it was Niagara Falls. The urinal was running full blast and running down the wall and floors. Surely someone had been here before me and why wouldnt they have said anything. I guess I better hold it a while longer. I back out with wet soles and inform the manager of my discovery. She asks if I giggled the handle; of course, in case I didnt need to say anything. So with sandwich in hand I am back outside headed for my vehicle thinking about Murphy's Law and how its always funny if you let later be now. I knew if I looked back on this later and thought about all the times Arbys had been guaranteed except this one time I really needed it ..... ha ha ha ha on me.

Off to the office I returned as I finished my sandwich. Hey, I waited this long, I might as well get something good to drink thats cool for the duration of the day. A Red Bull, water and Starbucks DoubleShot Vanilla, I had almost forgotten of my need until I was comfortably at my desk making a 32-pdf. Of course, at this point, everything is completely fine again. Aint life grand. Funny what altered focus will accomplish. Nonetheless; the weekend awaits and I am ready to receive. No plans; just openness! But if I get to cook; here's a thought!

Fabulous Friday Fixins: Again!
This one contains one of my all time favorite sweets. Nilla Wafers. You know which ones; anything else aint worth banannas!

Banana Pudding




Banana Pudding Tarts
INGREDIENTS:
1 1/2 C. vanilla wafer crumbs
1/2 C melted butter
1-2 ripe bananas
1 vanilla pudding mix made according to directions
Redi-Whip or any other whipped topping, if desired

Nilla Wafers

Crush the vanilla wafers. Melt butter, or margarine. Mix
crumbs and butter well.

Partially fill a muffin pan with the mix. Press firmly to
the sides and bottom making a cup. Put in freezer for 2
hours.

Make the pudding mix while the crusts are in the freezer.
Let it set a bit in the fridge.

Slice bananas into 1/2" slices.

Use a pointed knife, gently release shells from pan. Place
on a large plate or cookie sheet.

Put a banana slice in the bottom, then a dollop of the
pudding...fill with pudding. Chill to fully set.

Put another slice on top...I put them on their edge so they
sit up on top. A squish of whipped cream is nice, too.

Friday Fixins' HOT APPLE PIE DRINK





HOT APPLE PIE DRINK



Ingredients
1 gal. apple cider
2 c. apple Schnapps
2 tbsp. brown sugar
1 tsp. ground cinnamon
Several cinnamon sticks

Add all ingredients in a large pan. Bring to a boil and then simmer. Serve hot with whip cream.

Well, let me tell you; it was another spectacularly sunny warm weekend down in the 'boro. I had a fantastic weekend. Our day started at 7am Saturday morning and ended at sundown. That intense day of outsideness included mowing the lawn, weeding, 7 yrds of mulching, stipping and painting the mailbox, planting MORE flowers, and applying turf builder. WHEW! Glad its Monday! The bad news; that was only half of the yard work.

Happy Mother's Day to all the mothers; we wouldn't be here without 'em. My wife had a nice Mother's Day. She enjoyed a Keri Underwood CD, cards, visiting with youngest son Nick and Tyler and voicemails wishing her well. We laughed and talked for several hours along with some outstanding french toast, cheddar brots, poundcake, and tapioca pudding. (Hmmm...I better workout tonite) Oh yeah, pass the popcorn.

Traffic was great and this day is moving along. I cannot help but think about our flowers. There's just something exciting about "life" and watching it happen and how it works in synchronicity. With the flowers come butterflies, hummingbirds and various other little critters that we don't normally see or notice. The air wafts by with a sweet perfume. The honeysuckle permiates the air in the backyard. We have two squirril-proof bird feeders on the back deck...only one is really squirril proof — they're pretty sneaky little brainiacs! Great bird watching weekend. I saw bluejays, goldfinches, english sparrows, wood thrushes, cardinals, chickadees, starlins and a tufted titmouse. (in case you had any doubts of my nerdness....)

Well, It Ain't Over Til....Friday Fixins' Too!

It's been an unusual week....what can I say, its been unforgettable. It is the kind of week that makes "NEVER" clauses rip from my lips in all capital letters. Tiny knows what that means and it's one of those inside jokes. Well, this week has added to my "Never Nameplates!" I guess thats all I am gonna say on that one for now. This day started with some fantastic doughnuts and will end with one incredible sweetie. This day is full of blogs; but I have no fingers that will translate. They are in conference still trying to decide what they can say to protect the guilty. Alas, at least, it's FRIDAY and the sun is shining and the temperature is warm. I think I will spend this weekend trying to forget about this week.

RECIPE: HOT/COLD STUFFED PEPPER & TOMATO BITES

INGREDIENTS:
stuffed pepper1 11-ounce jar pickled jalapeno peppers, drained
1 8-ounce package cream cheese, softened
1 container cherry tomatoes
1/2 small onion, grated
4 slices bacon, cooked & crumbled
1/4 c. green olives, chopped
1/4 c. grated cheddar cheese
1 dash Worcestershire sauce
1 dash celery salt
1 dash cayenne pepper

DIRECTIONS: Cut peppers in half and remove seeds. Beat cream cheese and add remaining ingredients. Stuff each pepper half with mixture. Cut a slice off stem end of each tomato; scoop out seeds with a small spoon or melon ball tool and fill with remaining cheese mixture. Garnish each with olive slices, pimento strips or bacon. The Other Side...of the week...









Well its been an extremely long and slow week full of diverse attentions. But at last it's Friday and I am forging through. The other side of the hill is in sight and I can see the path before me just before gravity makes my full commitment. A man's home is his castle. Hopefully your castle is safe, peaceful and full of joy. It is my refuge from everything outside my heart. I like that. It may rain, sleet or even snow; I don't care; I will be home. Well I will have to go out occassionally; but I prefer to go out when it might be just a bit dangerous/adventurous. My nephews will celebrate birthdays this weekend. It will be nice to see their cheer and zest. Kids have a way of enjoying life that most of us adults have long forgotten. I never want to forget the energy and thrill from just doing something for the fun of it and having an outlook that more fun is around the corner. May my best days always be ahead. I have a giant Superman coloring book for just such a break from adulthood. There's nothing like a 64 Crayola Crayon box with the sharpener in back and a full coloring book sprawled out on the floor as you color into a mental release. It helps if you hang your tongue out just a bit. Sometimes I even get family and friends to join me. It reminds me of things I really like: jumping in mud/water puddles, blowing bubbles, making airplanes, doodling, making paper boats, walking in the tall grass and jumping into a huge pile of leaves. That's the magic of innocent imaginations. I never needed video games or thought about blowing up things....guess I was kinda boring. I am convinced that the world would have more happy adults if we stay kids.





It will also be a great weekend for some good cuddling. The weather outside is frightful.... That will be nice too. Have a great weekend and do something unimportant and see the power of small things. Hello Utah, CA, FL, GA and of course TN friends.
