Blind Insight; Friday Fixin's!

Its been a month of many things. I am not sure what to blog about these days...so many choices and so little time. Things have been busy but things have been good and in some areas, never better. I try to take and even make time to be thankful and give thanks. Everything we have is a gift and precious to be guarded. I try to learn my future lessons now. I suppose thats why I am fascinated by the idea of time travel. In the same breath; I could only wonder what horrors we would create if we were ever capable of such things. I would love to think that we would use such an ability to right the wrongs of the cosmos; but I know we would more than likely go steal all the greatest inventions and breakthroughs and almanacs from the future so we could live as kings now.

However; this blog is about "insight." It's that mysterious force that allows us to know the future or know which direction to go or when someone needs us, is injured or dead. I typically trust my insight and instincts far more than my eyes and ears. My wifey marvels, as do I, how I get to locations without directions even when I go in the completely opposite direction. (stubborn tank-full courage). I think it was Einstein or that said or Spoc I heard that said, "when you have eliminated the possible; then the impossible must be true..." other cool quotes and musings.... How do we activate the many unseen and unexplained gifts we all probably posess? Is there a sense after the sixth?

All that has made me hungry. So without further yammer; its time for a Double-Feature Fixins of Friday Fixins!
These recipes may produce unwanted calories, bulges or pounds. PLEASE exercise accordingly....

Pecan Chicken Breasts

RECIPE: BAKED PECAN CHICKEN BREASTS

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*


INGREDIENTS:
6 boneless, skinless chicken breasts, pounded thin
4 cups ice water and ice
4 t salt
3/4 cup ground pecans
2 whole eggs
2 T milk
2 T honey
1/2 t salt
1/2 t black pepper, course ground fresh

DIRECTIONS:
Marinate the chicken breasts in iced salt water for 1/2 hour.
Beat milk with honey, then add beaten edds, salt and fresh
ground pepper. Put egg wash in one shallow bowl, and pecan meal in another. Dip each chicken breast in the egg wash, then into the pecan meal and pat the meal into the breast to form a crust. Place the breasts in a shallow baking pan that has been sprayed with cooking spray, and bake for 35 minutes at 375, or until the breasts are done through.

RECIPE: CHOCOLATE CHIP CHEESECAKE DIP

INGREDIENTS:
1/2 c Raisins
1 tb Brandy
2 c Cream Cheese; Softened
1/2 c Whipping Cream
1/2 ts Vanilla Extract
1/4 c Dark Brown Sugar
1 ts Cinnamon; Ground
1/2 c Mini Chocolate Chips
1 x Cinnamon; Ground

DIRECTIONS:
Mix the raisins and brandy (making sure all the raisins
are coated) and let soak for 15 minutes. In another bowl,
beat the cream cheese and whipping cream until well
blended and smooth. Add the vanilla, mixing well. Blend
in the brown sugar and cinnamon. Mix in the "slushed"
raisins and chocolate chips, blending well. Garnish with
a light dusting of cinnamon. Serve at room temperature.
DIPPERS: Graham Crackers, Honeydew Melon, Strawberries,
Peaches, Dried Fruit, Pound Cake Cubes




That sums it up for a casual Friday strolling into an uncharted weekend. Fare thee well....

GROUNDED; :(!...with Friday Fixins









OF course the weather did not cooperate! I couldnt fly today. It's kinda ok. We rescheduled for next week. I spent the morning with my honey beginning with breakfast at Cracker Barrel....ahhhh. Oh yeah, not a work! even better. I have been TOO focused lately...way too tunnel visioned. I like MONEY and the life it provides....go figure. In the new year; I will have much more; whatever it takes. In complete disagreement with some; I am not conceited; but I know how valuable my contributions are and my willingness to excel and learn new things in the process. I have enjoyed my national customers and thanks for some great business. We shall kick it up in the new year! No more mercies...all debts paid or canceled.



The shiny sword slices through the silent wind humming as it moves from left to right. It returns to its sheith by the hands of the samouri without the eyes of the onlookers even noticing its motion from origin.


Well its off to the movies and relaxing. Hope you had a great day. Tomorrow I hope to awaken to snow. Its another very busy day; which means no workout for me. I still have 15 days to reach a goal of three lingering goals to be completed before the end of 2007. I will do that. I finish what I start and I do what I say. Thats what they remember; so they say. Put that on my grave.



Friday Fixins!


Peppered Pecans
Peppered pecans, made with pecans, hot pepper sauce, butter, garlic, and salt.

INGREDIENTS:
* 3 tablespoons butter
* 3 cloves garlic, minced
* 1 to 1 1/2 teaspoons hot pepper sauce
* 1/2 teaspoon salt
* 3 cups pecan halves

PREPARATION:
Preheat oven to 250°. Melt butter in a small skillet; add hot sauce, garlic and salt. Sauté for 1 minute. Toss pecans with butter mixture; spread in a single layer on baking sheet. Bake pecans for about 1 hour or until pecans are crisp, stirring every 10 to 15 minutes. Makes 3 cups.

Yellow Nightmares and Friday Fixins!

I was behind a school bus this morning at the crack of dawn and it took me too far back...trapped between must and can't. For some of you, this will give you the same flashback. It's one of those "Ramen Noodles" transporters — those words or phrases that immediately conote a completely similar time full of hopes, fears and perceptions. Its a symbol for those magicly shared growing up times that dont even require description when spoken to the right people.

I can remember surviving in college on $20 a week and Ramen Noodles. I couldnt dream of it now. Is it only because I dont have to? Hmmm. It seemed pretty easy too back then. Anyway, on to the Yellow Monster Tales.

HHHRRRRRRRRRRNNNNNNN....HRRRNNNNNN... (tip: sound effects really help tell a story)
It bellowed and wobbled down the gravel road, waking the sun and the neighbors as it cruddled along, missing no potholes. WHEEEZZZST! it would squeak to a stop just before its glass jaws would spring open with a cool gust on a young morning face, terrified of what came next. Its what always came next. Some days were better than others; but most were blahhhhhh. The insistent eyes of the bus driver forced you to take the first step long before you were ready. Your ears could already hear what you would soon come face to face with. The sound of your footsteps echoing inside your mind like lead bricks being dropped on a thin layer of cheap rubber over cold steel as your heartbeat competes to be heard first. You notice the cold bar that helps you steady your climb just before your last private second of clearing the little half-wall before you are "on the runway." It's a tiny little passage you shuffle down. But make no mistake! Whatever is going on is NOT more important than ignoring the person flailing about that doesn't have a seat yet. Nothing is more important than the casual, but intentional verbal pebbles slung your desperate way. Your ears catch them all; your mind and eyes try to ignore everything for that one break of compassion, mercy or maybe even luck that some seat has magicly been preserved just for you. There are no warm fuzzy looks staring back into your eyes; only irritated people as you attempt to stop at every possibility. Finally someone angrily moves their stuff over so you can take a seat...not that the bus has been waiting still all this time; you've been swaying left and right, forward and backward for at least 2 minutes as the jeers crowd into your exhausted and embarrassed mind. But sitting is not the end of the treat......but that's another Yellow Monster Tale...


Its funny now...well, slightly. Was it the red and yellow lights that triggered the memories? The big red stop sign that opens like a greedy coffin? Does it carry over later to police lights? Was it the bright yellow cage sillohetted against the dark morning dawn? Maybe it was the look on the nerdish kid's face I could see even in very little light. I knew what he felt like. I had been him in the past and sometimes him in the future. I knew his oddness would spotlight him once the steps were cleared. I knew the thick glasses and ackward walk would sit him apart from the crowd. Even his sister's beauty would only be a curse. We won't even talk about how it feels being left by the school bus.......

The bus was nearly invisible around the curve ahead by the time I blinked back into the present. Luckily noone else was behind me or a sharp horn would have smacked me back to the future. Oh yeah....the good ole days.


Oh well...on to something better! Its Friday Fixin's and I LOVE pecans! I can also appreciate a little chocolate. You're gonna love this!

RECIPE: CHOCOLATE PECAN SQUARES

INGREDIENTS: Base:
1/2 cup butter, softened
1 egg yolk
1 cup flour
2 tablespoons powdered sugar

Topping:
3 eggs
1/2 cup brown sugar
2 tablespoons flour
1/4 teaspoon salt
2/3 cup corn syrup
1 tablespoon lemon juice
1 cup pecans
1 cup chocolate chips

DIRECTIONS: Base: Combine butter and egg yolk in a mixing bowl. Add flour and powdered sugar. Press into a greased 8 inch square pan. Bake for 15 minutes at 350 degrees.

Topping: In a large bowl, beat eggs until slightly foamy. Combine brown sugar, flour, and salt. Stir into the eggs until blended. Beat in the corn syrup and lemon juice. Stir in the pecans and chocolate chips. Spread over the base. Bake at 350 degrees. for 35 to 40 minutes, until the top is set and the edges are browned. Cut into squares when cold.
